Pascal has been working in his family vineyards since 1982. Upon his father's retirement in 1995 he took over his family estate, Doquet-Jeanmaire. In 2004 he established his namesake domaine, splitting the family's vineyards with his sister, so he could pursue a heightened focus on natural farming practices and vineyard health -- today his vineyards are certified organic. All of Pascals wines see at least three months aging before disgorgement, while other vilification techniques vary by cuvee.
