100% Chardonnay from the south of Cote des Blancs. 61% 2017 vintage, 39% perpetual reserve. Bottled April 2018. Disgorded July 19, 2022.

Pascal has been working in his family vineyards since 1982. Upon his father's retirement in 1995 he took over his family estate, Doquet-Jeanmaire. In 2004 he established his namesake domaine, splitting the family's vineyards with his sister, so he could pursue a heightened focus on natural farming practices and vineyard health -- today his vineyards are certified organic. All of Pascals wines see at least three months aging before disgorgement, while other vilification techniques vary by cuvee.
