At Domaine At Domaine Gilbert Gillet, they believe that every parcel of vines is unique and should be treated as such. That's why they work each of their 12 vineyard plots differently, based on their growth and terroir, to produce wines that are truly one-of-a-kind.
From the pruning and harvesting of the grapes to the aging and bottling of the wines, every step of the process is done with the utmost care and attention, ensuring that their wines are of the highest quality and truly reflect the spirit of Burgundy.
During the harvest, 3 selections are made: one in the vineyard and 2 in the winery using 2 sorting tables.
Red grapes are 100% destemmed and subjected to a long maceration and long traditionnal pressing.
The wines are aged for 18 months in barrels without racking and then bottled using gravity during a favorable lunar phase.
